Cooking Filet Mignon

Filet Mignon is French, of course, with filet meaning "slice" and mignon meaning "delicacies." Fillet comes from small end of the tenderloin (called the short loin) which is on the back of the rib cage of an animal. This area of the animal is not loading, so that the connective tissue is not toughened by exercise resulting in extremely tender meat. This also means that meat from some flavor of the meat has found that the bone attachment is missing. To keep the flavor,You must cook filet mignon quickly. This can be a variety of ways, including frying and grilling.
It should never be cooked over medium heat, more than ever is made, the offer is less dry and the flavor will be lost. You should always use a dry method of cooking, even if it is a quick method. Cooking methods that do not get wet, are types such as roasting, pan, grilling, frying, etc. Since this piece of meat is more dry than others,do not want to cut the meat to check to see if it is done. Instead, you should touch. The touch-control method is not as difficult as it may seem:

1. If the meat feels hard or firm, is to be done.

2. If the filet mignon is soft to the touch and the finger leaves an imprint, it is rare.

3. If it is still soft, but leaves no imprint, and is slightly elastic, then it is rare to medium () is best for this particular type of meat.

The reason is often Filet Mignonwrapped in bacon (this is called the packaging Barding), because this particular piece of meat fat layer that is surrounded. The bacon not only adds extra variation that filet mignon, affects the fat, in order to keep the meat from drying out. This is a concern since the strips are so small mignon, filet, and have less fat than most cuts of beef.

What to serve with filet mignon

Since the taste of filet mignon is usually very mild, many people prefer to serve withSauces, both stifles meat or as a dip. There are many different choices for the best sauce for filet mignon, and most preferably is determined solely by certain tastes of the person. Some consumers prefer a certain type of steak sauce for dipping and some prefer a marinade to add flavor to food. Each of these can fail.

Wines & Filet Mignon

There are many different types of wines that are good to serve with filet mignon, and determination that hasgo best with it depends largely on the flavor of the sauce. This is especially true if the sauce is strong enough, or has a taste that is stronger than the filet mignon is. Best wines of the game with the filet mignon are dry, red wines like Merlot. If you're a sweet wine is your preference, you can groped to examine (a White Zinfandel, unless you want your choice, even if you want) the use of pepper on the filet mignon much. If you're a wine drinker, the best match with filetMignon is a rich chardonnay.

Tips for cooking Filet Mignon

-Cut in the selection of fillets or pieces, dark red, choose the lighter color. This indicates more marbling suggest gently. This cut is so tender that should never be cooked at a medium-rare. The longer you cook, which is less sensitive and dry.

-Use a dry, high heat method of roasting, such as frying, roasting, frying pan or grill the cut for this race.

Entire threadwonderful, what or baked crust () in savory pastries.

Cut-in meat to check doneness precious juices to escape. Use the touch method. Press the flesh. If it feels smooth and soft and leaves an imprint, it is rare. -If it is a bit 'soft, but elastic, is medium rare. The minute it starts to feel at the company, is exaggerated.

-Since the tenderloin has no surrounding fat tissue, is often shrouded in a layer of fat (horse armor), and tallow or lard to preventDehydration. Not blended with slices of tenderloin. Horse armor also adds flavor.

Filet-Cubed is a popular choice for fondue, hot-pots and shish kebab.

-To ensure even cooking when roasting the whole tenderloin, the small end should be raised and tied or trimmed for other uses.

How to BBQ a Santa Maria Tri-Tip the Right Way!

Santa Maria tri-tip is a fantastic piece of meat for grilling. It works really well if you will maintain a larger group of people. This piece has an amazing steak meat texture and it can be hard to cook it wrong. But there are a few tips you should follow when grilling tri-tip. A decent sized tri-tip can usually serve five or six people. Double the number of tri-tips if you are cooking for more people. Remember that all the remains to magnifySandwiches.

If you are from the east coast you can not know what is the Santa Maria tri-tip. On the west coast you will find tri-tip found on almost every grill. If you are from the East Coast and have not had the chance to try to tri-tip, then I suggest you do before you. And remember, this is not his chest.

There are many ways to a tri-tip prepared to be grilled. One of the things that one would want to do before cooking to marinate your tri-tip overnight. This label is in a delicious aroma. Consider using a dryRUB on the tri-tip the moment before you do on the grill. One of the ways I likes a BBQ tri-tip, start with a dry rub, and then 10 minutes is the tri-tip baste with BBQ sauce before using it from the grill. Grill your tri-tip which gives it a nice crust.

The most important secret of a tri-tip barbecue grill over indirect heat it properly. You want the temperature of your grill to 325 °. This is called a slow boil. The time for a tri-tip cooking, if slowlyCooking varies typically 60 to 90 minutes, depending on size of roast. A rule of thumb I use is the BBQ tri-tip about 30 minutes per pound.

The correct way to a tri-tip should be served medium to medium. Tri-tips can get tougher, as too soft. I've noticed that some cooks will cover the tri-tip with aluminum foil. I do not recommend doing so. Covering the tri-tip with aluminum foil makes the tri-tip gray, and you're not a nice searedCrust.

I hope this guide will help you a grilling Santa Maria tri-tip that your whole family will love.

How to Cook Filet Mignon

Filet Mignon! To the minds of many people, the words themselves speak of excellence, good living and expensive tastes. No wonder. Carefully selected and expertly cut, is a steak, filet mignon lover's dream.

Filet mignon is a boneless steak, which results from the tenderloin of the cow, which as the name says, cut the tender meat is.

The filet itself is cut into portions usually 1 to 2 inches thick. Often stores sell these parts wrapped in bacon. The reason for this is that AA-file does not contain as much fat marbling bone generally not steak cuts of bacon, then replace the missing fat.

If you prefer your marbling to be natural, or simply do not eat pork, then look for filet mignon that is pink instead of red - the lighter the color the better, in other words. Lighter color = more marbling.

An important thing to remember, when cooking filet mignon, whether you fry, grill, broil or fry pan, is the high usageHeat in the process. A second important point is, it does not cook too long, filet mignon is particularly susceptible to dehydration as they cook.

Hold the two most important points in mind, almost every recipe for fillet mignon steak work. Cookbooks and the Web are overflowing with imaginative things to do with this royal piece of beef. If you have never cooked filet mignon, but here are two basic recipes for the beginning:

Ingredients

4 filets mignons

Salt

Black pepper

Note connoisseurs will tell you that filets mignons can only be properly appreciated the medium-rare or even rare. I tend to agree. But if you really bear the thought not to eat steak that pink, likes to cookmore. Even at the start with high heat so minimizes the time required to reach the desired state of doneness.

How to Cook Beef Cheek

"Beef cheeks?" I asked, staring at the menu. "What are beef cheeks?"

I am afraid that I first encountered this item on a menu in a fancy restaurant in Manhattan, I reacted like dumb yokel stereotypes come to the big city for the first time.

That was a few years ago, and I've since learned that many people (Texans who are not happy to let go of losing a portion of a cow, to mind) are very familiar with beef cheek. It also means that beef cheek just that - the cheekPart of the head of a cow.

The one I had that night in New York was delicious, so I swore to try cooking at home. At this point, but it was not easy to find beef cheeks in many places, at least not in the stores, where I lived. Nowadays, it is somewhat easier, and even the large discount club stores occasionally for sale.

Beef cheek is not quite hard, and many people's patience it takes to cook it as it should be cooked. But I promisethat if you persevere, you will be rewarded with an excellent dish of meat. In fact, it can for you under the "sweet beef" you will ever tasted.

The traditional way of cooking it is beef cheek stew, although I've seen it in all sorts of other recipes. Here is a good recipe for beef cheeks, note that you will require a beef bones for the production of a share.

Ingredients beef bones

Beef cheek

2 garlic cloves

4 medium to large carrots

4 barsCelery

1 small onion

Thyme

Rosemary

1 bay leaf

Olive

Salt

Coarsely ground black pepper

1st Directions Roast beef bones in the oven for about 15 minutes.

2. Mince 1 clove of garlic. Chop 2 carrots and 2 stalks of celery. Put these with the bay leaf into a large pot. Add enough water to cover well, and start simmering.

3. Add the roasted beef bones and more water to cover. Bring pot to a slow boil, cook for 1 hour. Check at regular intervalsand remove water as necessary to keep liquid from boiling.

4. Remove the beef bones and bay leaf from the pot. What remains in the pot is the best camp.

5. Salt and pepper the beef cheek.

6. The onion and the remaining carrots and celery, mince the remaining clove of garlic, and fry these in olive oil with a good splash of rosemary and thyme, onion, until translucent.

7. Add the sauteed ingredients to the stock pot, stir and then add in theBeef cheek.

8. Braise for at least 1 hour. Test with a fork to see if the meat is tender. If not, go braising, until it is. Remember, it is important that the beef cheeks are very tender before serving.

9. Serve beef and camp together.

Three Steps to Cooking Perfect Steak on Your Outdoor BBQ Grill

If you're like me, when you crank up, barbecue for the season it's all about cooking perfect steak barbecue. I love all kinds of food on an outside barbecue grill and rotisserie, but nobody says summer quite so sweet smell of steaks on the grill. For me, the results are always predictable and always is nearly perfect. This is because I use the same process every time and I begin with the end result in mind. So this is my first tip: cook the perfect steak starts with defining what that means,And then you learn about the basic method of cooking, so you can navigate in this desired point. You need to decide on the definition of perfection for themselves - that's the fun part of it. But the next few paragraphs should help with the second part of it - learning the process and the basic method that helps you get your cooking perfection.

Everything begins fillets before cooking!

For most predators, is the beginning of the process towards steak nirvana, if you reallyfillets for cooking. Unfortunately, this approach comes from one of my best secrets for cooking a perfect steak: start with the whole tenderloin. There are so many advantages over buying a whole tenderloin and the cutting itself. You can definitely save some money, learn how to do this, and it is much easier than you think. If you buy the whole tenderloin, the first thing you need to do is fillet before cooking it, remove the "chain". The chain is the side muscle, it contains amuch fat and is ideal for use later in casseroles, chili peppers, or even my favorite treatment: Tenderloin Philly Cheese Steak. But this is a very different way to cook fillets and beyond the scope of this article! If you remove the chain, you must remove the fat at the upper end of the fillet - "head". This can also be removed and used later. What you are left with a long fillet, from which your steaks. The most important thing to remember is to try to cut the steaks fromuniform size of weight. Uniform size corresponds to line cook, a reliable cooking the same! Use a scale and aim for a uniform size somewhere 3 to 5 ounces per steak, depending on who you are for cooking.

Do You Really Know How to Grill Beef?

If you think that most people, barbecue takes no skill at all. There is so much easier than cooking and can be done with little foresight or common knowledge. Right? This is actually one of my favorite cookingMyths! To know how to be properly grilled beef (or anything else) is essential to outdoor cooking success. Grilling is a direct source of heat conduction. Cooking is grilling as an engine is a rocket to flying. Everything happens quickly and thoroughly with a barbecue and that errors in it. So, we start with the simple procedure:

First, get the grill as hot as possible. Keep the lid down while heating grill, open, but when cooking. This is another common grilling mistakes. If youClose the lid during cooking, the method is to apply themselves, like that of the cook stove. Why do it outside on the grill?
Brush the steak with olive oil and season with salt and pepper. You can use any kind of seasoning or rub here, but I think that the true taste of steak comes from a good piece of meat, and you need nothing else. You can have a different opinion season as you see fit.
Place the steak on the hot grill down "side show" - that is, would see the pagewant to display on the plate goes to the first barbecue.
Now observe for signs of done-ness. If the steak is 75% done on the one side, turn it over and cook the rest of the road.

How To Grill Fish Easily

Grilling is a delicious and easy way to quickly cook fish without adding more than a tiny bit of extra fat!
In France, this is often so strong, by the herbs on the side of the fish and such, which improved from the grill while you cook the fish. In other words, you actually grill the herbs along with the fish.

When you barbecue in the house (and not via an indoor BBQ) all you need to do is use a stove-top grill.

This method can be excluded with a whole, or used, aFillet. It is best to leave the skin on your fish for the cooking method, such as the delicate meat is to protect from breaking up while cooking.

Salt the fish (and pepper it, if you want). If you prefer, you can make small diagonal slits in the skin that they are more crispy while cooking and to let in all the other options you may want to add, while receiving the preparation and cooking.

Heat a stove or barbecue grill on high heat, until water splashed on them sizzle. Then, veryLightly grease your cast iron grill with a paper towel that has a little olive oil on them. When hot, lay the fish, skin side down and cook it through to about 2 / 3 of the way, if you cook a filet. If it is 2 / 3 cooked, turn the fish over and quickly grill the other side (the remaining 1 / 3 of fish). If you cook a whole fish, have it all the way through the cook on one side and then turn it over and grill the other side. (Each "side" of the fishis to the bone in the middle.)

The larger the piece of fish, the "lower" the heat, but you still need to grill the fish quickly at a high heat, the only way to turn it down a little.

If you have a fillet, skin, and you only have a grill on which to cook it, I recommend that you grill on a lightly oiled piece of parchment paper.

You need to keep an eye on your fish and the heat again if necessary.

Fish is almost translucent when raw and loses itsTranslucency (opaque), the moment when it is done. This is the exact time, to serve as fish is rubbery, very easily if they over-cooked. They fish on a warmed serving plate.
You can serve the fish with olive oil and freshly squeezed lemon juice. You may also be used to fish with a sauce.
